happy Monday to you

Guess who's in Belize at this very moment? If you guessed me then you're wrong. If you guessed Nick you probably cheated and already knew, but you are also right. Nick is in Belize as part of a financial literacy outreach program for the company he is interning with this summer. The sandy, creole speaking, tropical beaches of Belize, and rather than mope at home I greyhounded it to DC to visit one of my best bfs, (yes I meant to say it that way, and no it's not redundant) Mallory for the week.

I have lots of adventures that I want to share with y'all from the past couple of weeks but I'm going to go out and adventure it up some more first. Those pictures are from my very first gluten free pie, which also happens to have been my very first strawberry rhubarb pie. It was surprisingly delicious. (If you don't understand why it was surprising please reread the sentences about it being my first gluten free strawberry rhubarb pie.) Now all I want to bake are more pies. They first convinced me to make pies, she just reinforced the desire.

What are some other good, but unique summer pies that I should try out?

  4. I want to learn to make pies! All those ingredients you used look awesome/yummy/etc. And how lucky of your husband! But being in DC also sounds so awesome!

  5. belize sounds like a dream right now and a rhubarb pie sounds like a challenge to me.... but should definitely try to bake one sometime.

  6. I love pies!! :) I made a strawberry, peach and coconut pie last Summer (gluten-free) that was soooo delicious! I also made some pies earlier this year that were just sweetened with honey - they were really good as well. I have the recipes on my blog if you're curious. I've always been a fan of rhubarb and strawberry - and apple thrown in the mix too. Glad you went to visit your best bf as not to miss your guy too much.
